‘Happy Gut’ Ramen

This easy homemade ramen is flavorful and comforting yet full of nutrients that will make your gut very happy.


Ingredients:

2 tablespoons of avocado oil or ghee

½ cup minced shallots

4 garlic cloves, minced

1 tablespoon of freshly grated ginger

3 tablespoons of organic miso paste (skip this if you’re on low histamine diet)

2 tablespoons of tamari souse or coconut aminos (skip this if on low histamine diet)

4 eggs

250g buckwheat Soba noddles

1 large handfuls shredded spring greens

4 spring onions, finely chopped

1 large handful of beansprouts

400ml of ‘gut-healing’ chicken broth

shredded cooked chicken meat (use the one from the chicken broth or different), alternatively you can use sliced and cooked beef


Directions:

Add oil/ghee to pan, stir in shallots, garlic, and ginger; cook 2 to 3 minutes, until aromatic. Stir in miso paste and tamari souse. Add the broth and bring mixture to a boil. Add the greens. Lower heat and very gently simmer over medium-low for 20 minutes. Add beansprouts and soba noddles and simmer for another 5 minutes (or according to the noddles instructions). Stir in cooked meat.

Ladle ramen into bowls, and top each serving with 1-2 soft-boiled egg, a handful of green onions. Enjoy!
